SPIRAL
This Year of the Metal Rat, a gastronomic plethora showcasing Peking, Szechuan, Guangzhou, and Shanghai cuisines headline Spiral’s Chinese Atelier led by Chinese Master Chef Eddie Chua.
Each cuisine is presented in a weekly rotation starting with Peking cuisine and its staple dishes including Peking Roasted Goose, Braised Lapu-Lapu with Ginger and Yellow Bean Sauce, Sea Cucumber with Quail Eggs, and Poached Peking Dumplings. Originating from the Chinese capital Beijing, Peking cuisine is known to be a melting pot of culinary traditions from all over China most especially of the coastal province of Shandong and the Chinese Imperial cuisine which was served to the royal family.
Szechuan cuisine takes center stage on the second week of festivities featuring Tea-Smoked Duck, Wok-Fried Mini Lobster with Szechuan Chili, Sauteed Beef Tenderloin Spicy Szechuan Style, and Chicken with Kung Pao Sauce. One of the most popular Chinese cuisines, Szechuan cuisine is characterized by its deep, bold, and spicy flavors brought about by garlic, chili, and the distinct taste of Szechuan pepper.

On the third week, Guangzhou cuisine elevates the line-up with richly scrumptious offerings including Roasted Suckling Pig, Superior Soya Pigeon, Abalone with Oyster Sauce and Sea Moss Mushroom, and Steamed Red Lapu-Lapu. Carrying some of the Eight Culinary Traditions of Chinese cuisine, Guangzhou cuisine is popular for incorporating meats in its dishes, emphasizing the balance of flavors and freshness of ingredients with minimal use of herbs and spices.
Closing the celebrations is Shanghai cuisine featuring Baked Scallion Soya Seabass, Drunken Chicken, Crispy Fried Pigeon, and Assorted Traditional Dimsum. Focusing on the quality of its raw ingredients and original flavors, Shanghai cuisine is known for its combination of sweet and salty flavors and for making fish, crab, or chicken ‘drunken’ with its rounded, mellow flavor.
January 24 rates are set at Php 2,850 nett for lunch and Php 3,888 nett for dinner. On Chinese New Year, January 25 rates are set at Php 3,588 nett for lunch and Php 3,888 nett for dinner.
