Experience world-class cooking at CCA, Manila with 2-star Michelin Chef Thierry Drapeau
The country’s top culinary school, the Center for Culinary Arts (CCA, Manila) together with the Institut Culinaire Disciples Escoffier (ICDE) invites all aspiring chefs, foodies, and connoisseurs as they welcome two-star Michelin chef Thierry Drapeau for a French cooking class and a level 4 course on January 22 to 24, 2018 at CCA’s campus in Makati.
Born in the city of Nantes in France, Chef Drapeau discovered his passion for cooking at a very young age when he spent time with his father at a market. At the age of 21, he was already appointed as chef de partie (station chef/ line chef) at a 2 Michelin stars restaurant, La Bateau Ivre. From then on, he lived up to his culinary passion, getting promoted to different chef titles in various restaurants in France, until he opened his own restaurant, Logis de Chabotterie. Ten years later, his restaurant was awarded with 2 Michelin stars.
Chef Drapeau is well-known for his “Vendee”, French-inspired dishes or what he calls as “cuisine of the soil”. His culinary style can be compared to how he says it, “I compose my dishes as if they are paintings.” His passion to discover flavors from different regions of France and his dedication to his career allowed him to carve a reputation as an excellent chef worthy of emulation.
For a special, limited-group engagement – and for the first time in the Philippines – catch Chef Drapeau on during his hands-on French cooking class on January 22 and 23 at CCA Makati Grand Kitchen. There will also be a must-experience exquisite Michelin-star level 4 course with French Masterchef Marc Toutain on January 24 also at CCA Makati.
